Foodie Friday- Zucchini

Happy Friday everyone!


Today's featured food is the delicious, healthy, and versatile zucchini. 


Health Benefits:

  • low-calorie and source of fiber 
  • The dietary fiber in zucchini helps lower cholesterol by attaching itself to bile acids that the liver makes from cholesterol for digesting fat. 
  • the vitamins C and A, as well as folate, found in zucchini act as powerful antioxidants that fight oxidative stress that can lead to many different types of cancer.
  • A one cup serving of zucchini contains over 10% of the RDA of magnesium, a mineral proven to reduce the risk of heart attack and stroke. 
  • the potassium found in zucchini helps lower blood pressure.


Ok, so you get the picture, zucchini is super healthy! But, how do you cook with it???


My favorite is the classic stuffed zucchini. If you have some leftover pasta sauce, you can use that. Just cut the zucchini in half, remove the seeds (which are edible, but some don't prefer the texture), sprinkle some salt and olive oil and cook at 450 degrees for 5 minutes. Then remove the zucchini and fill with your pasta sauce (or any other filling you might create) and bake at 350 degrees for 30-35 minutes. Also good with cheese sprinkled on top.

I must admit, I was hesitant when I first saw the chocolate + zucchini combo, but this blog says, "The zucchini creates a moist cake, makes it slightly healthier"....so it sounds like it's worth a try!
